Brining does two things. Firstly, bringing tenderizes the product by which water and salt penetrate the muscle fibers causing osmosis. Secondly, you can flavor your brine by using apple juice or other spices, which include chiles as well. You can even add fresh peaches for different flavorings as well.

Marinate Pork Chops For As Long As Possible

My favorite way is to marinate the pork in olive oil, fresh garlic, peaches & thyme. I let marinate for at least two hours up to 12 hours. I then pat dry, add salt and pepper, and sear over applewood. I let the chops cool and then build my pork chops in a Sous Vide and Cyrovac then with more fresh peaches, roasted garlic, fresh thyme, and some root vegetables. I slow cook them at 165f for at least 24 hours! They are full of flavor and moist as well as tender!

Prevent Dry Pork Chops With Butter: Styles Of Pork Chops

The problem with pork chops is that they can easily become dry and tough during cooking. So, the best way to deal with them is by pan-frying them on high heat with butter and oil and continually baste them while they cook.

Never, Ever, Overcook Pork

The chops shouldn’t be overcooked – which is a very common cause of dry, tough pork. n that case, I’d suspect sub-par meat as the most likely culprit. Modern breeds of pigs are often geared towards “producing” lean meat with little fat cover. Pork produced that way is almost impossible to cook without becoming dry and somewhat tough. Finally, putting them in a not-too-hot (150–170°C) oven in a tightly covered dish after a quick sear can make not overcooking your pork chops easier, as well. Mainly by slowing down the cooking process, thus making timing less crucial.

Frying Is The Easiest Styles Of Pork Chops

You can fry it with seasoned flour. I like spicy so pepper flakes or ground cayenne are a must. The fried in oil hot enough to sear both sides then reduce heat and let through. Fried as above battered but removed from the pan at 95% done. Add plain flour to pan deglaze with a bit of red wine and water. After gravy comes together replace chops in a pan with gravy and lets it simmer until tender. Cover pan during the last step and you’re done!

Pork Chops are very easy to prep and cook. They are wonderful for a fancy meal or just to relax and eat with the family. In my opinion, chops are as good for you as beef and have a better flavor when properly prepared!
