  • One tablespoon olive oil
  • Two boneless, skinless thin-sliced chicken breasts
  • Kosher salt and freshly ground black pepper, to taste
  • 6 cups chopped romaine lettuce
  • 1 Roma tomato, diced
  • 1/4 cup tortilla strips
  • 3/4 cup canned corn kernels, drained
  • 3/4 cup canned black beans, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Ranch dressing
  • 1/4 cup BBQ sauce


Firstly, heat the olive oil in a medium-sized non-frying pan over medium-high heat. Then season the chicken breasts with salt and pepper, to your preference. After that add the chicken breasts in the pan and cook, flipping once, until cooked through. Cook for about three to four minutes per side and let it cool before dicing it into bite-size pieces.

Now take a large bowl, place romaine lettuce in it, and then top it with chicken, tomato, corn, beans, onion, and cheese. Then pour Ranch dressing and BBQ sauce on top and gently toss to mix. Enjoy the BBQ chicken salad in just under fifteen minutes. You can top it with tortilla strips.

Bacon And Avocado Macaroni Salad

  • 12 ounces elbow pasta
  • Five slices bacon, diced
  • Two avocados, halved, seeded, peeled and diced

  • Two teaspoons fresh thyme leaves, for garnish

For The Lemon Thyme Dressing

3/4 cup mayonnaise
1/4 cup freshly squeezed lemon juice
1 1/2 tablespoons lemon zest
One tablespoon sugar
One teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper, to taste
1/3 cup olive oil


To make it, you have to start with the dressing first. To make the dressing, blend mayonnaise, lemon juice, lemon zest, sugar, and thyme in the bowl of a food processor then season them with salt and pepper, to taste. With the motor running of the food processor, add the olive oil in a slow stream until it emulsifies after that is done set aside for the time being.

Cook the macaroni according to package instructions in a large pot of boiling salted water and then drain it well. Then heat a large non-stick frying pan over medium-high heat and add bacon. Now cook it until it turns brown and crispy, for about six to eight minutes. After that, transfer it to a paper towel-lined plate.
