2 slices of bacon
2-3 spring onions, sliced diagonally
3-4 cups leftover medium or long-grain rice
3 eggs
2 tsp. light soy sauce
Toasted sesame oil

Directions To Fry Rice

First of all, start by taking a non-stick pan or skillet, and place it on medium heat. Dice the bacon and add it to the pan, then saute it till its color becomes a light shade of golden. Remove the bacon and set it aside. Leave about a spoon of bacon grease on the pan.

Now take the eggs and beat them well. Then add them into the pan, and spread it evenly so that the egg covers the base of the pan. Once the egg becomes a bit fluffy, add the rice on top of it. Spread the rice so that it evenly covers the egg. Stir the rice and eggs together for a few minutes. Next, add the bacon to the rice and stir again for about 2-3 minutes. After that, add salt to taste. Then add a teaspoon of soy sauce and stir. If you want a stronger flavor, then you can add some more soy sauce as per your desire. But do not add more than two teaspoons or it will give a bitter taste.

Finally, turn off the heat, and put in the spring onions. Then add about half a teaspoon of toasted sesame oil, and stir it gently for one last time. Cover the fried rice and let it sit for a few minutes. And with that, your fried rice is ready to serve.

Extra Tips To Fry Rice With Perfection

  • The most important aspect of this recipe is how you stir the rice. You have to make sure that all the ingredients mix well, but you should never apply force or press the rice. Try to be as gentle as possible. That way, the rice won’t become mushy.
  • Leftover rice is preferable for this recipe compared to freshly cooked rice. The reason is that newly cooked rice is soft and more likely to stick and form clumps.
  • When adding soy sauce, keep in mind that it should give a very light brown color to the dish. That is why we recommend using light soy sauce.
