Fried Rice With Shrimp Indo-Chinese Style Recipe

Ingredients

  • 2 cups of cooked rice (choose long grain soft rice if possible)
  • 150 grams medium-sized cleaned and deveined shrimps or prawns
  • 1 tsp light soy sauce
  • 1/4 tsp pepper powder
  • 2 tsp olive oil
  • 1/2 cup chopped mixed vegetables (carrots, beans, green peas, and sweet corn)
  • 1/4 cup cut mixed capsicums
  • 1 tbsp finely chopped garlic
  • 2 tbsp chopped spring onions (green and white separated)
  • One egg, lightly beaten
  • 1 tsp light soy sauce
  • 1 tsp white or black pepper powder
  • 1/2 tsp white vinegar
  • 3 tbsp olive oil
  • salt to taste

Step 1: Marinate The Shrimps

The first step is to marinate the shrimps. So for that, place the shrimps in a bowl and add soy sauce and pepper powder. Then mix it well and set it aside for about ten minutes.

Step 2: Cook The Rice

To cook the rice, add some of it in your cooker and add salt to taste and lemon juice. Take in mind that the rice should be fluffy and separated. Don’t let the rice overcook, or it will become mushy. After it’s cooked, place the rice in a separate plate and let it cool.

Step 3: Cook The Shrimps With Veggies

To cook the shrimps, pour some olive oil in a heated pan. When the oil heats, add chopped garlic and stir it till the color turns to golden. Then add spring onion whites and mix well. After that, add the shrimps with the mixed vegetables and fry them till they are crunchy and almost cooked. Finally, add some capsicum/bell peppers and stir to mix well.

Step 4: Fry The Rice with Eggs, Mix It With Shrimp And Veggies

Now heat the pan to medium and pour a little olive oil in it. Once the oil heats, add the cooked rice in it and fry for a minute. Then at the center of the rice, make a hole and add a lightly beaten egg into it. Turn the heat up and stir the egg and rice to mix well for about 5 minutes. After that, add half tablespoon of pepper powder, salt and soy sauce then give it a quick stir. Then add the cooked shrimps and saute it well. Also, add a few drops of vinegar and half a tablespoon of pepper powder and mix well for one minute. Finally, transfer it to a plate and garnish the fried rice with spring onion green.
