Nothing tastes great than a hot plate of fried rice with chicken at the side in the afternoon. It will make your tummy full with just a plateful. Children, as well as adults, love to have fried rice. It is fairly easy to make and takes less time to cook. So, it is much convenient than other dishes for which you have to wait for a long time. And the best part with fried rice is, you don’t have to worry about your leftover rice anymore as you can use it for cooking tasty and nutritious fried rice at your home. Since there are a lot of variations of fried rice around the globe, so today we will be giving you the recipe for Caribbean style fried rice with chicken.

Ingredients

  • Five cups cooked rice (see note below)
  • One lb chicken (chicken breast)
  • One cup diced carrot
  • Two scallions (chopped finely)
  • Half cup diced bell pepper
  • Quarter teaspoon black pepper
  • Three cloves of garlic crushed or grated
  • One teaspoon grated ginger
  • Three tablespoon vegetable oil (divided)
  • Three tablespoons dark soy sauce *
  • Half teaspoon sesame oil
  • One large onion diced
  • Half cup diced celery
  • One cup bean sprouts
  • One tablespoon shado beni (optional)
  • Quarter teaspoon Chinese five-spice powder
  • Half scotch bonnet pepper

Directions To Cook

First, you need to do season the sliced chicken with the five-spice powder and black pepper. Then let it marinate for a few minutes, keep in mind to mix it well. Next, heat a non-stick frying pan on medium heat and add two tablespoons of vegetable oil. After that, place the seasoned chicken in the pan and stir it well. Then cook it for about 3-4 minutes and set aside.

After that add one tablespoon of vegetable oil to the pan and add the diced onion in it. Grate in the garlic and ginger and let it cook for a few minutes, before adding the diced carrots, bell peppers and celery. Then cook everything for five minutes. Also, add the diced scotch bonnet pepper and soy sauce, followed by the pre-cooked chicken and sesame oil. Now let it cook for some time.

Then add the rice and stir well. Finally, add the bean sprouts and toss, then top with the finely chopped scallions and the shado beni and cook for a minute or two. So with that, your home-made Caribbean style fried rice with chicken will be ready.

Some Extra Tips

The rice should be cooked in boiled and salted water, and it should be refrigerated before going through with the recipe. It is done so to preserve the taste and flavor of the rice. Also, remember that we don’t want the rice to be soggy. Instead, we want to have the grainy texture to it. It is preferred to use leftover rice, bearing in mind that it should not clump. Clumping makes it harder to work with.

Also, to perfectly slice the chicken, slice it when it is still a little frozen. Because then you will be able to get a firm grip and cut thin slices by doing so.
