1. Cheesy chicken and broccoli casserole

This recipe is an all-time favourite of the low carb dieters and it is incredibly easy to make at home. This cheesy chicken n’ broccoli casserole contains less than 10 grams of carbs per serving, and it will definitely fill you up faster!


2 cups cooked rotisserie chicken (shredded)

1 cup shredded cheddar cheese (well-packed)

½ cup mayonnaise or sour cream (low fat)

¼ cup crushed pork rinds (substitute with panko breadcrumbs if desired) plus a little more for sprinkling on top before baking 1 green onion (finely sliced)

1 teaspoon garlic powder

1/8 teaspoon salt

Freshly ground black pepper to taste

2 cups broccoli florets (steamed or boiled until just tender)

3 tablespoons grated Parmesan cheese (optional) for sprinkling on top before baking instructions:

1. preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish with cooking spray. In a large bowl, mix together chicken, cheddar cheese, mayonnaise or sour cream, pork rinds, green onion, garlic powder and salt & pepper. Mix well and spread into the prepared baking dish.

2. Place the steamed or boiled broccoli over the top of the chicken mixture. Sprinkle with Parmesan cheese, if desired, and additional pork rinds.

3. Bake for about 20 minutes or until bubbly and golden brown on top. Serves 4-6.

2. Sausage & egg “muffins”

These sausage & egg “muffins” are a great way to start your day, especially if you’re on the go! They’re easy to make ahead of time and they’re high in protein and low in carbs, so they’ll keep you feeling full all morning long.


1 tablespoon olive oil (or cooking spray)

3/4 pound ground sausage (any kind)

1 cup grated cheddar cheese

10 eggs (beaten)

Salt and pepper to taste

Pepper flakes or any other desired spices (optional)


1. Heat olive oil in a large skillet over medium-high heat. Add the ground sausage to the pan and cook until browned, about 5 minutes. Drain off any excess grease if necessary, then transfer the cooked sausage to a large bowl.

2. Add the grated cheddar cheese, beaten eggs, salt and pepper to the bowl with the cooked sausage and mix well until all of the ingredients are combined.

3. preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin pan with cooking spray or olive oil. Evenly distribute the egg mixture among all 12 muffin cups in the prepared pan.

4. Bake for about 20 minutes, or until the eggs are set and beginning to turn golden brown on top. Remove from oven and let cool for 5 minutes before serving. Sprinkle with pepper flakes or any other desired spices, if desired. Serve warm. Makes 12 servings.

3. Chili & cheese stuffed peppers

4 large bell peppers (any colour)

1 pound lean ground turkey or ground beef (or a mixture of both)

1 small onion (finely chopped)

2 cloves garlic (minced)

2 tablespoons chilli powder

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon cayenne pepper (optional)

14 ounce can of diced tomatoes with green chiles, drained and rinsed, juices reserved if needed to thin out the chilli slightly if desired

¾ cup shredded sharp cheddar cheese Instructions:

1. preheat the oven to 375 degrees F (190 degrees C).

2. Cut the tops off of the bell peppers and remove the seeds and ribs inside. Arrange the peppers cut side up in a baking dish just large enough to fit them snugly.

3. In a large skillet over medium-high heat, cook the ground turkey or beef (or a mixture of both), onions, garlic, chilli powder, oregano, salt and cayenne pepper until the meat is browned and cooked through. Drain any excess grease if necessary. Stir in the diced tomatoes with green chiles and ¼ cup of their juices (reserve the rest of the juice to add later if needed).

4. Spoon the chilli evenly into each of the prepared bell peppers, then sprinkle with the shredded cheddar cheese. Bake in the preheated oven until the peppers are tender and the cheese is melted and bubbly about 20 minutes. If desired, add a little bit of the reserved tomato juice to thin out the chilli slightly before serving. Serves 4.
