Recipe to Authentic Japanese Style Ramen Noodles
- 9 oz fresh angel hair pasta (225g)
- 8 cups water (2L)
- 2 Tbsp baking soda
- boiled egg halves
- bean sprouts, blanched briefly
- green onions, cut finely
- Pork Slices (Boiled)
For the Soup
- Pork Broth
- 6 cups water (1.5L)
- 50g ginger root, sliced
- Three cloves garlic, skinned
- One bunch of green onions
- 4 Tbsp soy sauce
- 2 Tbsp sake
- 1 tsp salt
- 1 tsp sesame oil
Directions To Cook
Take the pork and rub salt over it. Cover it up and refrigerate it overnight. After that is done, in a pot pour water and add together ginger, garlic, green onions, and salted pork. Boil the pot at high heat. Check for fat and other floating scums and remove it. Then reduce the heat to low and cover the pot and let it cook for another two hours. After that, let the broth and the pork cool completely. Strain the broth and save the pork. Slice the pork which we will use to top the noodle later.
Also cut other toppings such as boiled eggs, green bean sprouts, and green onion before making the noodles or else you won’t have time to cut it later when the noodles are cooked since it will soften the noodles. Then boil the broth and add sake, soy sauce, salt, and sesame oil. Let it simmer at very low heat until the noodles are done.
In boiling water, add baking soda and the fresh angel hair pasta. Let it cook for thirty seconds and then strain, Divide the noodles among the bowls immediately. Add the broth on the noodles and place the sliced pork, boiled egg, and other toppings on it. You can now enjoy the authentic Japanese ramen noodles made at your own house.
Variations Of Ramen
There are basically three types of ramen noodles- Shyoyu or soy, Miso, and Shio or salt soup noodles. This soup has typically its broth made out of pork or chicken and later topped with soy, Miso or salt. The recipe that we mentioned above is for soy soup noodles, but if you want to have the latter, you can do so with ease, just change the topping to your preference.
Special care must be given to the noodles. Noodles and the soup make the two main components of ramen. If you have the best soup, but the noodles are not good, or vice versa, the quality of your dish will not be as expected.
